Simple, delicious and a crowd-pleasing cocktail at our recent 11th birthday. After countless requests, we're sharing our 5 step spicy margarita recipe for you to enjoy. We loosely followed the BBC Good Food recipe online (click for a full list of ingredients) with a few tweaks here and there to suit our palettes. ¡Salud!
1 - Prepare your ice cubes by filling a tray with water, adding a Thai red chilli to each compartment and freeze.
2 - For the chilli syrup, add the sliced chilli and sugar into a saucepan with 50ml water. Bring to a simmer over a low to medium heat, stirring until the sugar has dissolved. Turn off the heat and leave to cool completely.
3 - For the salt rim garnish, either mix all the ingredients together and tip onto a shallow plate. Or, if like us for ease, simply use a pre-mixed Tajín seasoning. Brush the rims of four tumblers with a little water, then dip into the chilli-salt mixture. Set aside whilst you make the margarita.
4 - Tip all the cocktail ingredients into a large cocktail shaker and shake vigorously until the outside of the shaker feels cold. If like us, you haven't one to hand, stir well (in order to aerate and dilute the drink) in a pitcher or large jug. We added a little more fruit juice than the suggested recipe to suit our palettes.
5 - Add your pre-made chilli ice cubes to each tumbler, pour and enjoy!
